Simon Rimmer is bringing a signature dish from his former Manchester restaurant Greens to Co-op Live as part of a new menu for the arena’s premium Hideaway lounge.
Launching this month, the Mediterranean-inspired menu includes the return of his Spinach & Feta Filo Pie, alongside meat, seafood and plant-based dishes designed for dining before and after shows.
The pie was a favourite at Greens, which closed in 2024 after more than three decades. Its Hideaway version combines filo, spinach, feta, pistachio, caramelised onions and Manchester honey.

Other dishes include Harissa Prawn Skewers with confit garlic, coriander, red chilli and lemon; Labneh & Flatbread with chilli oil, za’atar, pine nuts and mint; and Crispy Cauliflower Fritti with muhammara, pomegranate molasses, pumpkin seeds and dill.
Rimmer, known for Channel 4’s Sunday Brunch and his restaurants and bars across Manchester, said: “The food at Hideaway should always feel the right thing to eat before and after a gig. But I think it’s more than that. I think it’s great food no matter when. Fresh, tasty, full of flavour. Served with passion and pride. Tuck in.”
The launch adds to Co-op Live’s premium hospitality offering, with Hideaway providing members with a dedicated space to eat, drink and socialise around arena events.
The lounge features plush seating, DJs and live entertainment, with programming complementing the show taking place in the main arena.
Membership includes access to Hideaway before and after publicly ticketed events, alongside premium tickets in Section 103, one of the venue’s closest seating locations to the stage.
